Slices of eel are served with puffed yuzu, inspired by airy puffed snacks like Cheez Doodles, left. Framed by a reverse comma of tomato lettuce and powdered onions, beef tongue is accompanied by small pieces of lettuce and a high-tech version of fried mayonnaise.






In September, talking to an audience of chefs from around the world, Wylie Dufresne of WD-50 on the Lower East Side of Manhattan waxed enthusiastic about a type of ingredient he has been adding to his restaurant’s dishes. 今年九月,在對來自全球的主廚聽眾演講時,紐約曼哈坦下東城WD-50餐廳的Wylie Dufresne 懷利‧杜夫雷,針對一種食材侃侃而談,他已將這種食材加進他餐廳的料理中。

Chefs are using science not only to better understand their cooking, but also to create new ways of cooking. The experimentation with hydrocolloids represents a rare crossover between the culinary arts and food science, two fields that at first glance would seem to be closely related but which have been almost separate. 全球主廚都在運用科學,除了藉此更了解烹飪,還另闢料理蹊徑。以水狀膠實驗新料理,是廚藝與食品科學的少見結合,這兩個領域乍看關係密切,卻一向幾乎井水不犯河水。

Food science arose in the 20th century as food companies looked for ways to make their products survive the trip to the supermarket and remain palatable. Xanthan gum, a slime fermented by the bacteria Xanthomonas campestris and then dried, is used in bottled salad dressing to slow the settling of the spice particles and keep water and oil from separating. Cooking is chemistry, after all, and in recent decades scientists have given much closer scrutiny to the transformations that occur when foodstuffs are heated. That has debunked some longstanding myths. And then there are hydrocolloids that come in white bottles like chemicals. A colloid is a suspension of particles within some substance. A hydrocolloid is a suspension of particles in water where the particles are molecules that bind to water and to one another. To make a flexible foie, a foie gras terrine is melted into liquefied fat, the xanthan and konjac are mixed in, and then a small amount of water and an egg yolk, which helps keep everything evenly suspended in the liquid, are blended in. The mixture is spread on a sheet, chilled, cut into strands and tied into knots. Hence, knot foie. 料理彈性鵝肝時,先將陶罐的鵝肝醬融化到液態油脂中,接著加入黃原膠與蒟蒻精粉,再加入少量水與一個蛋黃混合。蛋黃的作用是讓所有東西均勻懸浮於液體中。接著將混合物平鋪,冷卻切條,最後將鵝肝條打結。鵝肝結就完成了。
One person asked why Mr. Dufresne went to the trouble of making a foie gras terrine, a process that takes half a day of chilling, when the next step was melting it into a liquid. 有人問杜夫雷何苦費事做陶罐鵝肝醬,過程須花半天時間冷卻,何況下一個步驟是將鵝肝醬融化到液體中。

In the period of which we speak, there reigned in the cities a stench barely conceivable to us modern men and women. The streets stank of manure, the courtyards of urine, the stairwells stank of moldering wood and rat droppings, the kitchens of spoiled cabbage and mutton fat; the unaired parlors stank of stale dust, the bedrooms of greasy sheets, damp feather beds, and the pungently sweet aroma of chamber pots. The peasant stank as did the priest, the apprentice as did his master’s wife, the whole of the aristocracy stank, even the king himself stank, stank like a rank lion, and the queen like an old goat, summer and winter. And of course the stench was foulest in Paris, for Paris was the largest city of France. And in turn there was a spot in Paris under the sway of a particularly fiendish stench: between the rue aux Fers and the rue de la Ferronnerie, the Cimetiere des Innocents to be exact. For eight hundred years the dead had been brought here from the Hôtel-Dieu and from the surrounding parish churches, for eight hundred years, day in, day out, corpses by the dozens had been carted here and tossed into long ditches, stacked bone upon bone for eight hundred years in the tombs and charnel houses. Only later - on the eve of the Revolution, after several of the grave pits had caved-in and the stench had driven the swollen graveyard’s neighbors to more than mere protest and to actual insurrection - was it finally closed and abandoned. Here, then, on the most putrid spot in the whole kingdom, Jean-Baptiste Grenouilie was born on July 17, 1738. It was one of the hottest days of the year. The heat lay leaden upon the graveyard, squeezing its putrefying vapor, a blend of rotting melon and the fetid odor of burnt animal horn, out into the nearby alleys. When the labor pains began, Grenouille’s mother was standing at a fish stall in the rue aux Fers, scaling whiting that she had just gutted. The fish, ostensibly taken that very morning from the Seine, already stank so vilely that the smell masked the odor of corpses.

Grenouille’s mother, however, perceived the odor neither of the fish nor of the corpses, for her sense of smell had been utterly dulled, besides which her belly hurt, and the pain deadened all susceptibility to sensate impressions. She only wanted the pain to stop; she wanted to put this revolting birth behind her as quickly as possible. It was her fifth. She had effected all the others here at the fish booth, and all had been stillbirths or semi-stillbirths, for the bloody meat that had emerged had not differed greatly from the fish guts that lay there already, nor had lived much longer, and by evening the whole mess had been shoveled away and carted off to the graveyard or down to the river. It would be much the same this day, and Grenouille’s mother, who was still a young woman, barely in her mid-twenties, and who still was quite pretty and had almost all her teeth in her mouth and some hair on her head and-except for gout and syphilis and a touch of consumption-suffered from no serious disease, who still hoped to live a while yet, perhaps a good five or ten years, and perhaps even to marry one day and as the honorable wife of a widower with a trade or some such to bear real children... Grenouille’s mother wished that it were already over. And when the final contractions began, she squatted down under the gutting table and there gave birth, as she had done four times before, and cut the newborn thing’s umbilical cord with her butcher knife. But then, on account of the heat and the stench, which she did not perceive as such but only as an unbearable, numbing something-like a field of lilies or a small room filled with too many daffodils-she grew faint, toppled to one side, fell out from under the table into the street, and lay there, knife in hand.

Tumult and turmoil. The crowd stands in a circle around her, staring, someone hails the police. The woman with the knife in her hand is still lying in the street. Slowly she comes to.

She stands up, tosses the knife aside, and walks off to wash.


And then, unexpectedly, the infant under the gutting table begins to squall. They have a look, and beneath a swarm of flies and amid the offal and fish heads they discover the newborn child. They pull it out. As prescribed by law, they give it to a wet nurse and arrest the mother. And since she confesses, openly admitting that she would definitely have let the thing perish, just as she had with those other four by the way, she is tried, found guilty of multiple infanticide, and a few weeks later decapitated at the place de Greve.

By that time the child had already changed wet nurses three times. No one wanted to keep it for more than a couple of days. It was too greedy, they said, sucked as much as two babies, deprived the other sucklings of milk and them, the wet nurses, of their livelihood, for it was impossible to make a living nursing just one babe. The police officer in charge, a man named La Fosse, instantly wearied of the matter and wanted to have the child sent to a halfway house for foundlings and orphans at the far end of the rue Saint-Antoine, from which transports of children were dispatched daily to the great public orphanage in Rouen. But since these convoys were made up of porters who carried bark baskets into which, for reasons of economy, up to four infants were placed at a time; since therefore the mortality rate on the road was extraordinarily high; since for that reason the porters were urged to convey only baptized infants and only those furnished with an official certificate of transport to be stamped upon arrival in Rouen; since the babe Grenouille had neither been baptized nor received so much as a name to inscribe officially on the certificate of transport; since, moreover, it would not have been good form for the police anonymously to set a child at the gates of the halfway house, which would have been the only way to dodge the other formalities... thus, because of a whole series of bureaucratic and administrative difficulties that seemed likely to occur if the child were shunted aside, and because time was short as well, officer La Fosse revoked his original decision and gave instructions for the boy to be handed over on written receipt to some ecclesiastical institution or other, so that there they could baptize him and decide his further fate. He got rid of him at the cloister of Saint-Merri in the rue Saint-Martin. There they baptized him with the name Jean-Baptiste. And because on that day the prior was in a good mood and the eleemosynary fund not yet exhausted, they did not have the child shipped to Rouen, but instead pampered him at the cloister’s expense. To this end, he was given to a wet nurse named Jeanne Bussie who lived in the rue Saint-Denis and was to receive, until further notice, three francs per week for her trouble.

Maggie moves house 大象'梅姬'搬家囉!

The elephant in the picture is called Maggie. Maggie is 25. She has lived in a zoo in Alaska, to the northwest of Canada, since 1983. 圖片中的大象名叫「梅姬」,她今年二十五歲。梅姬從一九八三年開始,就住在加拿大西北邊的阿拉斯加州的一所動物園中。

Yesterday Maggie moved to California, in the west of the US. California is much warmer than Alaska. Her new home is at the Performing Animal Welfare Society (PAWS). 梅姬昨天搬到美國西南方的加州。加州跟阿拉斯加比起來,氣候暖和了許多。她的新家是一所表演動物福利協會

Maggie has been all alone in Alaska since the zoo's other elephant, Annabelle, died in 1997. Her new home is much nicer than her old one. In Alaska she lived in an elephant house with concrete floors and a small outside area. Gu Gu bites again 貓熊古古又咬人了

Gu Gu, a panda who is one of the star attractions at the Beijing Zoo, has tasted human flesh for the second time. 「古古」是北京動物園內一隻相當受到歡迎的明星熊貓,牠又再次咬傷一名遊客。


The eight-year-old panda was surprised when Li Xitao, a 15-year-old boy who sells recyclables he picks up off the street, jumped into the panda exercise area last month. Gu Gu, who weighs 110kg, attacked the boy. Li had both his legs gnawed to the bone. 平常靠撿拾資源回收維生的十五歲男孩李喜濤上個月忽然跳入熊貓活動區,驚嚇到今年八歲的古古,體重重達一百一十公斤的古古攻擊這位男孩,結果李的兩條腿都被咬到深可見骨。

Pandas have long been known to be a bit crazy at times. They are capable of attacking humans, especially if they feel threatened. 熊貓的本性偶爾就會發狂,牠們會攻擊人類,尤其是在牠們感到威脅時。

Zoo workers seem to be blaming the boy for the latest attack, saying he shouldn't have jumped into Gu Gu's pen. And police said that the boy climbed over the zoo wall to avoid buying an entry ticket. 園方將這次熊貓攻擊事件怪罪在男孩身上,認為是他不應該跳進古古的柵欄內。警方也表示這名男孩是為了省錢所以爬越動物園外牆試圖入園參觀。
